The evolution of the wine continues with 50 per cent Dijon clones, 60 per cent wild ferment (up from 20 per cent in 2005, the first venture into wild yeast). It has a fragrant bouquet of nectarine, white peach and a hint of citrus rind leading into a vibrant, fresh and very long palate; you know the French oak is there, but it speaks very quietly.

Winemaker’s Notes: : The Adelaide Hills now produce some of Australia's finest and most sought after Chardonnay. These are sophisticated, barrel fermented wines with fine fruit character, and restrained oak. M3 is made exclusively from grapes grown on Shaw and Smith's M3 vineyard at Woodside. The grapes are hand picked and whole fruit pressed prior to undergoing barrel fermentation and maturation in French oak. Extended time on yeast lees and partial malolactic fermentation impart greater complexity and flavour. The aim is to produce the finest Chardonnay possible – a wine that has the capacity to age in bottle.
Colour: A lemon yellow with gold tinges
Aromas: A dense melon and citrus fruit with a noticeable minerality
Flavours: well bodied and creamy with a perfect balance with fruit and a crisp finish.
