This is always changing, but at the moment it has to be Spain because I am currently trying to learn everything I can about this region.

Favourite Lifford wine

This is tough, but the one I drink the most is Michele Chiarlo Moscato d’Asti “Nivole” DOCG. It’s great for everyday celebrations and everyone I serve it to loves it.

First job

Picking strawberries. It’s always been about food and wine.

Indulgence

A great bottle of vintage Port.

Inspiration

Constant learning. That’s the great thing about wine – there’s always more to learn.

What or where do I retreat to?

My garden. It’s another of my passions.
